Francis
Winner of the Best New Cheese in the 2012 British Cheese Awards and the Best Semi-Soft Cheese at the same awards in 2013. Francis is a washed rind cheese which starts its journey at Lyburn cheesemakers in the New Forest. James Mcall brings the young cheeses to his maturing room in Child Okeford, Dorset where he washes them in a traditional French culture and matures them for 8 - 10 weeks. The result is a pungent sticky cheese which is soft around the rind and firmer in the middle.
